Spicy Barbecue Ribs

4-5 pounds beef ribs
2 large bay leaves
2 tablespoons olive oil
1 Spanish onion, chopped finely
5 cloves garlic, minced
1 tablespoon grated ginger root
1 tablespoon ground cumin
1 tablespoon ground coriander
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/4 teaspoon ground nutmeg
One 15-16 oz. can plum tomatoes with juice
1/2 cup brown sugar
3 tablespoons tamarind paste (found at gourmet markets)
1 jalapeno pepper, chopped finely
2 oz. cilantro, chopped
Salt
Ground pepper

Heat olive oil in large saucepan over medium high heat. Add onion and garlic and cook until almost soft. Add the ginger root and cook two minutes. Add spices and cook an additional 20 minutes.

Add tomatoes and juice, brown sugar, tamarind paste and jalapeno, stirring to combine. Cook, stirring occasionally until desired thickness, about 30 minutes.

Place a large pot on a burner with 5 quarts water. Bring the water to a boil. Add the bay leaves and beef ribs into the pot. Bring to a boil again and cook ribs until fork tender.

Remove ribs from pot and place in an oblong baking pan. Brush on barbecue sauce and place in a 350 degree oven. Cook for 30 minutes more. Remove from oven, place ribs on a large platter. Garnish with your favorite colorful vegetables.

Short Ribs To Die For

3-4 pounds short ribs of beef
1 teaspoon toasted sesame oil
1 cup chopped onion
1 teaspoon minced garlic
1-1/2 cups water
1 cup catsup
2 tablespoons brown sugar
2 tablespoons cider vinegar
2 tablespoons Worcestershire sauce
1-1/2 teaspoons chili powder
1 teaspoon paprika
1/2 teaspoon red hot pepper sauce

Heat oil in large saucepan over medium heat. Add the onion and garlic. Cook for 4 minutes, stirring frequently until the onion is translucent. Add the remaining sauce ingredients. Bring to a boil over medium high heat, then reduce heat and simmer 30 minutes, stirring often. Place mixture in a blender or a food processor and blend or process until a smooth consistency.

In a large cooking pot, bring 5 quarts of water to a boil and add the short ribs of beef. Cook ribs until fork tender, remove from pot and place in oblong baking dish. Brush on barbecue sauce and place in 350 degree Fahrenheit oven.

Cook for another 30 minutes. Place on warm platter after cooking.
